Menu Plan 5/22


Our schedule has finally calmed down a little around here. After School Program has ended for the year, so I won't be working until 5:15 every night now. (Hooray!)

Our newest challenge is moving...again. It seems like we just did that last summer...and the summer before...and...well, never mind - you get the picture! First, we need to find a new place to live - and let me tell you - that is not easy around here! We have about two months left in our current rental house, so we are praying that God finds us a place - quickly! In the meantime, we are packing, downsizing, cleaning out the freezer and pantry, etc.

So here's what we'll eat this week:

Sunday: Gone at a retreat.

Monday: Gone at a retreat.

Tuesday: Pizza meatloaf, potatoes, carrots.

Wednesday: BBQ shredded chicken (from the freezer), veggies.

Thursday: Homemade Spanish Rice with ground beef, veggies. (Recipe coming in two weeks!)

Friday: Homemade Gluten Free pizza (with Bob's Red Mill mix).

Saturday: (My family arrives!) Grilled pork roast, potatoes, veggies, rolls.

For breakfast, we each grab what we want: waffles, muffins, cinnamon rolls, pancakes, cold cereal, yogurt, etc.

For lunch, I usually eat leftovers. My husband eats a sandwich or leftovers - he takes his lunch to work most days. Since I work part time, I take my lunch to school (and usually we meet at church and eat together!).
