Menu Plan 1/22: Cheesy Chicken & Rice Bake, Oven-Baked Frito Pie, and more!


Lately, I've been shifting meals around quite a bit on our menu plan! January has been a crazy month for us, and I haven't truly grocery shopped since December. We've been getting by just fine, though, and you will be happy to know that I am planning a shopping trip for this Wednesday!

On Saturday last week, I did make Cheeseburger Soup instead of pizza burgers. We haven't had that yet this winter and it was delicious!

Here's what we will {hopefully} eat this week:

Sunday: Gone at a retreat.

Monday: Gone at a retreat.

Tuesday: Pizza Meatloaf, rice, veggies.

Wednesday: Cheesy Chicken and Rice Bake (new recipe for us!), homemade crockpot applesauce.

Thursday: Leftovers.

Friday: Oven-Baked Frito Pie (also a new recipe), fruit.

Saturday: Pizza Burgers or Pizza Sloppy Joes, Garlic & Herb Potato Wedges, veggies.

For breakfast, we each grab what we want: waffles, muffins, cinnamon rolls, pancakes, cold cereal, yogurt, etc.

For lunch, I usually eat leftovers or something simple, like grilled cheese or quesadillas. My husband eats a sandwich or leftovers - he takes his lunch to work.
