Menu Plan 8/29-9/4/10


Here's this week's Menu Plan for dinners this week:

Sunday: Grilled Chicken Crispy Oven Fried Ranch Chicken Breasts (I omitted the oatmeal; I used GF bread crumbs [I make my own] and Kraft Ranch dressing), Fresh Green Beans with Lemon Pepper, Rice

Monday: Out to eat on an invitation from church members (including a pontoon boat ride!).

Tuesday: Homemade Sloppy Joes - I have extra sloppy joe meat frozen from a few weeks ago that we'll use; boiled potatoes, fresh green beans.

Wednesday: Homemade Gluten-Free Pizza! This is so good that my non-GF husband will even eat it - and enjoy it! We use Bob's Red Mill pizza mix right now. I haven't been ambitious enough to try making my own dough - yet!

Thursday: I have a Ladies' Aid potluck at church. Not sure what my husband will eat...leftovers?

Friday: (In-laws here to visit) Grilled burgers, veggies of some kind, roasted potatoes.

Saturday: We'll be in La Crosse with my in-laws visiting my husband's grandparents so we'll probably grab dinner there.

In general, we save grilling for Fridays, Saturdays and/or Sundays, when my husband is off work and able to grill (since he does the grilling!)

For breakfast, we grab what we each want: waffles, muffins, pancakes, cold cereal, yogurt, etc.

For lunch, I usually eat leftovers. Every once in a while, I allow myself a grilled cheese sandwich with Udi's bread, but that is a special treat! My husband eats a sandwich or leftovers - he takes his lunch to work 2-3 days a week and comes home 1-2 times a week, depending on his schedule. Occasionally, I take lunch to church and we eat there together.
