Menu Plan 1/16
This week will be a short week for us, as we finally get to celebrate Christmas and see my side of the family next weekend! But, before the fun can happen, we have to get through four crazy, busy days!
Sunday: Pizza meatloaf, garlic bread, and a vegetable. (For the meatloaf, I will use this recipe as a base. I'll leave out the cheddar cheese and put in pizza sauce, cut-up pepperoni and mushroom pieces. I'll probably sprinkle cheese on top at the end.)
Monday: Salsa chicken (Put some taco seasoning on chicken breasts, cover them with salsa and bake. Sprinkle with cheese at the end of baking - EASY!), tater tots, and a vegetable.
Tuesday: This will be a "fend-for-yourself" night, since I have an dinner function at school.
Wednesday: Leftovers. I have a feeling we'll be scraping the bottom of the fridge by Wednesday!
Thursday: Gone.
Friday: Gone.
Saturday: Gone.
For breakfast, we each grab what we want: waffles, muffins, pancakes, cold cereal, yogurt, etc.
For lunch, I usually eat leftovers. My husband eats a sandwich or leftovers - he takes his lunch to work most days. Now that I'm working part time, I take my lunch to school (and usually we meet at church and eat together!).
