Menu Plan 6/12


This is {finally} a fairly normal week for us! I expect to finish my Americorps responsibilities on Monday and then we can put that job in the books. :)

We also get to go back to our college for the weekend, which we are really excited about!

Sunday: Grill (brats).

Monday: BBQ pulled pork, veggies, potatoes. (For the pork, I'll use a combination of this recipe and a recipe from a Reader's Digest magazine.)

Tuesday: Fiesta Chicken with Rice, veggies.

Wednesday: Pepperoni Pizza Quiche.

Thursday: Parmesan Chicken Nuggets, rice.

Friday: Out of town.

Saturday: Out of town.

For breakfast, we each grab what we want: waffles, muffins, cinnamon rolls, pancakes, cold cereal, yogurt, etc.

For lunch, I usually eat leftovers. My husband eats a sandwich or leftovers - he takes his lunch to work most days. Since I work part time, I take my lunch to school (and usually we meet at church and eat together!).
