Chicken and Rice with Cheese Sauce

Here's a simple meal that tastes delicious!

Chicken and Rice with Homemade Cheese Sauce

Ingredients
  • 2 chicken breasts
  • 2 cups cooked rice (whatever variety you prefer)
  • 1 batch of homemade cheese sauce (I make this exactly as it's described in that recipe...simple and delicious!)
Directions

Dice chicken breasts and cook in a skillet with a bit of olive oil. Season chicken breasts with salt and pepper if desired.

Prepare the cheese sauce as directed. I recommend following the direction exactly as written. Update: You can use a gluten free flour blend and it should work just fine.

Once the chicken, rice and cheese sauce are all ready, you can serve! Start with a "bed" of rice on each plate. Add some cooked diced chicken. Drizzle cheese sauce over the top and enjoy!

*I usually add some steamed veggies and a dinner roll (maybe Butterhorns or Gluten Free Dinner Rolls) to our plates and we have a delicious, well-rounded dinner!

    1. @ wendyssmile - I have used several different kinds -- Bob's Red Mill all purpose blend, Better Batter, and Meister's GF blend. All of them have worked very well for me!
