Last week, we tried a new recipe and found that we both really enjoyed it. However, I seriously tweaked the original recipe, so it no longer even resembles the original!
This is my recipe for Cheesy Crockpot Chicken and Potatoes. It's 100% gluten free!
Ingredients
- 2-4 chicken breasts
- 1/2 - 3/4 cup chopped green pepper
- 4-5 medium red potatoes, diced
- 1 tsp. paprika
- Cream of chicken soup (enough for two servings) - I think one can of store-bought would work fine, too.
- 4 oz. cream cheese
- 8 oz. shredded cheddar cheese
- 1 tsp. Worcestershire sauce
Directions
- Put chicken breasts, green pepper and potatoes in crockpot.
- Sprinkle paprika over everything.
- Pour cream of chicken soup over everything.
- Cook on low/medium for 5-6 hours.
- Remove the chicken, green pepper and potatoes from the crockpot. Set aside in a bowl.
- Add cream cheese, cheddar cheese, and Worcestershire sauce to remaining sauce in crockpot. Heat on low until melted, stirring occasionally.
- Return everything to the crockpot and keep on low until ready to serve.
Have you ever tried smoked paprika? It is amazing and it might give this a different taste now and then. I am so going to try this, it looks good!
