Recipe: Cheesy Crockpot Chicken and Potatoes


Last week, we tried a new recipe and found that we both really enjoyed it. However, I seriously tweaked the original recipe, so it no longer even resembles the original!

This is my recipe for Cheesy Crockpot Chicken and Potatoes. It's 100% gluten free!

Ingredients
  • 2-4 chicken breasts
  • 1/2 - 3/4 cup chopped green pepper
  • 4-5 medium red potatoes, diced
  • 1 tsp. paprika
  • Cream of chicken soup (enough for two servings) - I think one can of store-bought would work fine, too.
  • 4 oz. cream cheese
  • 8 oz. shredded cheddar cheese
  • 1 tsp. Worcestershire sauce

Directions
  1. Put chicken breasts, green pepper and potatoes in crockpot.
  2. Sprinkle paprika over everything.
  3. Pour cream of chicken soup over everything.
  4. Cook on low/medium for 5-6 hours.
  5. Remove the chicken, green pepper and potatoes from the crockpot. Set aside in a bowl.
  6. Add cream cheese, cheddar cheese, and Worcestershire sauce to remaining sauce in crockpot. Heat on low until melted, stirring occasionally.
  7. Return everything to the crockpot and keep on low until ready to serve.

  1. Have you ever tried smoked paprika? It is amazing and it might give this a different taste now and then. I am so going to try this, it looks good!
