Menu Plan 10/31
After last week's menul plan that wasn't really a menu plan, I'm looking forward to getting back to regular meals! Here's what I'm planning on making this week:
Sunday: Pizza burgers (We grilled on Saturday instead of making these, so we just bumped them back one day. That's the beauty of menu planning...it's so flexible!)
Monday: Breakfast for dinner - eggs and bacon.
Tuesday: Cheeseburger meatloaf (FYI - I don't "roll" this. That's way too much like work! I just basically "layer" the meat mixture and cheese in a loaf-sized glass dish.)
Wednesday: Leftovers
Thursday: Pulled Pork Sandwiches (This is a new one for us.)
Friday: Chicken Nuggets (I usually use a gluten free flour blend, along with some garlic salt and pepper...and maybe other seasonings if I feel like it. Just dip in egg and coat with flour mixture; then fry!)
Saturday: Harvest Dinner at Church (Hubby will eat there; I'll take leftovers along.)
For breakfast, we each grab what we want: waffles, muffins, pancakes, cold cereal, yogurt, etc.
For lunch, I usually eat leftovers. My husband eats a sandwich or leftovers - he takes his lunch to work most days. Now that I'm working part time, I take my lunch to school (and sometimes we meet at church and eat together!).
