Menu Plan 10/3/10


Last week's menu plan meant nothing. Since we couldn't live at our house from Saturday through Wednesday, we just survived off the kindness of others and some quick cooking in the church kitchen. Towards the end of the week, we were finally able to cook in our own kitchen! (Taco meat in the freezer and grilled chicken saved two nights!) All in all, we did really well!

Hopefully, we'll be able to stick to the menu plan this week, barring any more flooding!

My After School Program starts this week and that means I'll be working until 5:00 or 5:30 on Monday through Thursday nights. We also have meetings at church 3 nights this week. Our menu plan will obviously take that into account!

Sunday: Broccoli, chicken and rice casserole, rolls.
To do for Mon.: Thaw breakfast sausage.

Monday: Breakfast for dinner
To do for Tues.: Thaw 1/2 pound hamburger.

Tuesday: Pizza pie, garlic bread/toast (We haven't had this in awhile, but it's sooo good!)
To do for Wed.: Thaw 1 lb. Italian sausage.

Wednesday: Queso fundido (We had this last month and loved it!)
To do for Thurs.: Thaw 2 chicken breasts.

Thursday: BBQ Chicken sandwiches in the crockpot
To do for Fri.: Thaw pork.

Friday: Grilled pork

Saturday: Something on the grill? It's supposed to be nice this week...

For breakfast, we each grab what we want: waffles, muffins, pancakes, cold cereal, yogurt, etc.

For lunch, I usually eat leftovers. Every once in a while, I allow myself a grilled cheese sandwich with Udi's bread, but that is a special treat! My husband eats a sandwich or leftovers - he takes his lunch to work 2-3 days a week and comes home 1-2 times a week, depending on his schedule. Occasionally, I take lunch to church and we eat there together.
