Menu Plan 1/2/11


Happy New Year! I just can't believe that the first decade of the "2000s" is gone!

I am looking forward to getting back to a more "normal" schedule (if there is such a thing!) in January. The holiday season sure kept us hopping here! Here's what we're planning on eating during the first week of 2011:

Sunday: Cheeseburger Rice, vegetable.

Monday: Breakfast for dinner

Tuesday: Taco Soup (We didn't have this last week since we were invited to a "Rose Bowl Party.")

Wednesday: Leftover night

Thursday: Ring of bologna, potatoes, vegetable. *I am not kidding you when I say that my husband's parents gave him a ring of bologna for Christmas. Yes, they really did! His dad said, "This is because your mean wife won't buy you one!" (For the record, I occasionally buy ring of bologna, but it doesn't often fit in our budget!)

Friday: Chicken, roasted potatoes, vegetable.

Saturday: Pepperoni macaroni (I just use gluten free noodles with this recipe) with garlic bread.

For breakfast, we each grab what we want: waffles, muffins, pancakes, cold cereal, yogurt, etc.

For lunch, I usually eat leftovers. My husband eats a sandwich or leftovers - he takes his lunch to work most days. Now that I'm working part time, I take my lunch to school (and usually we meet at church and eat together!).

  1. I've never heard of ring of bologna before. I'd be curious to see what it looks like. Maybe you could snap a picture?
