March DIY project: Gluten Free Pita Bread

My Do It Yourself project for March was Gluten Free Pita Bread. Again this month, I created an adventure for myself!

The pita bread wasn't necessarily a lot of work time-wise, but the recipe just didn't work out like I had hoped. I'm 99.9% sure that this is my fault!

My rising dough

My first problem was that I actually ran out of gluten free flour. Oops. That realization was followed by a raid of my pantry - which turned up only potato flour. Since running to the store for flour was not an option (as in, no stores sell GF flour around here!), I decided I'd have to try. So I added in the potato flour and said a little prayer.

My dough seemed to come together fairly well, although it was still very "sticky." I managed to get the pitas formed and onto the pizza pan, though.

Unfortunately, my pitas just wouldn't "pop." The picture above show the closest I was able to get (which obviously wasn't much!). I sliced each pita open, though, which was quite easy. However, when I tried to stuff a pita on Sunday for lunch, the pita just broke apart in my hands. So, I used it like flatbread instead! It tasted just fine to me - it just didn't function like a pita should.

Me and gluten free dough (in general) seem to have issues. I intend to keep trying though - because I won't let the dough win!

April's Do It Yourself project: Homemade Artisan Bread (not GF). I will likely make half of this recipe for Easter weekend, as we will have company.

  1. I think I may give the Gluten Free Pita Bread recipe a try, but I am like you. Gluten Free dough and I just don't get along, lol. Your Pita Bread still looks very yummy.

    1. Yes I sure do hope that someday, GF dough and I will learn to get along. It still tastes good, thankfully. :)

      Best of luck to you!
