Menu Plan 4/14: Italian Cream Cheese Chicken Casserole, Chicken Enchilada Dip, + more!


Sunday: Pizza burgers, hash browns, fruit.

Monday: Italian Cream Cheese Chicken Casserole, rolls/toast.

Tuesday: Leftovers.

Wednesday: Shredded Pork sandwiches (from the freezer), potatoes, veggies.

Thursday: Breakfast for dinner (probably pancakes & bacon).

Friday: Grill.

Saturday: Chicken Enchilada Dip, veggies.

For breakfast, we each grab what we want: waffles, muffins, cinnamon rolls, pancakes, cold cereal, yogurt, etc.

For lunch, I usually eat leftovers or something simple, like grilled cheese or quesadillas. My husband eats a sandwich or leftovers - he takes his lunch to work.

  1. Pizza burgers sounds like something my family would like. Do you mix ingredients into the beef before cooking? Or, just top with pizza flavors?

    1. We made this recipe up on our own - here's what we do:

      Mix together and make patties: ground beef, pizza sauce, cut-up pepperoni, and shredded mozzarella cheese. We cook them on our Presto skillet. When they are cooked, we top with whole pepperoni slices and sliced mozzarella cheese.

      Recently, we have been mixing ground beef and ground Italian sausage together - and that is AMAZINGLY yummy!
