I have had a really busy week in the kitchen! Here's the rundown of what I accomplished...
My week of baking did not start off on a good note, unfortunately. I was so excited to make Gluten Free Cream Wafers...but man, were they difficult! In the end, I tried two batches and gave up on both, deciding that apparently I am not cut out to make GF Cream Wafers.
It would appear that my mistake was not freezing the cookies. Don't skip that step. It's crucial. Trust me.
I decided to redeem myself in the kitchen by making Chex Party Mix. Thankfully, I was successful in this endeavor! {But, seriously, who could mess up Chex Mix?!}
I made one and a half batches of Original Chex Party Mix. I made a whole batch with regular pretzels and a half batch with gluten free Glutino pretzels. This stuff is addicting!
I also made another batch of these Cookie Dough Truffles. When I made them last week for our church council Christmas dinner, I used Better Batter gluten free flour - and they were delicious!
In fact, they were so delicious that my husband told me I had better make another batch this week - you know, because we'll have company this week (not for him, though, right?!). This time, I used regular flour.
My husband ate a truffle made with regular flour on Thursday night and then looked at me funny and said, "I think I like the gluten free ones more!" Seriously?! {If he could live on Chebe products and gluten free cookie dough truffles, he would be gluten free. Yes, he told me that!}
{My only complaint is that I can't make my truffles look anywhere close to as pretty as Taste of Home does! How do they do it?!}
On Wednesday, I decided to be brave and try making gluten free cookies again. I'll admit, I was nervous. I didn't trust myself. I froze these cookies solid.
Hooray - I succeeded in making a gluten free version of my grandma's Toffee Chocolate Chip cookies! They are super delicious - and I think my grandma would be proud!
On Thursday, I made a double batch of these Pumpkin Cheesecake muffins (sadly, they are not gluten free). I'm taking half to church on Friday for the funeral luncheon (yes, unfortunately, we have a funeral this week). I'll be serving the other half to our company over the weekend.
And finally, I made a batch of these dinner rolls for this weekend (again, these are not gluten free). This was a new recipe for me, but it was so easy. Hopefully they will taste as delicious as they look (I'll have to rely on others to tell me!).
