Menu Plan 12/4: Stuffed Pepper Casserole, GF Pizza...


This will be an odd week at our house. For the first time ever in our marriage, I'm actually going out of town ("home" to see family) by myself! I'm looking forward to being able to go to my sister's college graduation, but I sure will miss my husband!

Between Advent dinners and being out of town, I actually have nine nights off in a row from cooking dinner - but I don't really like that idea. I am going to miss making dinner!

Stuffed Pepper Casserole

Sunday: Stuffed Pepper Casserole, steamed broccoli, Chebe Garlic & Onion breadsticks.

Monday: Gluten-free pizza (trying Chebe crust mix, with homemade pizza sauce), Artisan lettuce salad.

Tuesday: Advent dinner at the little church (soup).

Wednesday: Advent dinner at the big church/Leftovers.

Thursday: Gone. (Stay tuned to hear how I manage to take a ten hour train trip while gluten free!)

Friday: Gone. (My husband will probably go out for pizza since I'm not here!)

Saturday: ? - I'm leaving that up to my husband since he'll be on his own for entertaining his parents!

For breakfast, we each grab what we want: waffles, muffins, cinnamon rolls, pancakes, cold cereal, yogurt, etc.

For lunch, I usually eat leftovers or something simple, like grilled cheese or quesadillas. My husband eats a sandwich or leftovers - he takes his lunch to work most days.
