Menu Plan 4/22: Pizza Pie, Chicken Enchilada Dip, plus more!


This week is going to be crazy! We have (another) funeral on Tuesday. Then we leave on Thursday for a whirlwind trip to St. Louis (for my sister's wedding) over next weekend.

Sunday: Gluten Free Pizza Pie, salad, rolls.

Monday: Chicken Enchilada Dip, vegetables.

Tuesday: Garlic Cheddar Chickenroasted potatoes, vegetables or salad.

Wednesday: Leftovers - clean out the fridge!

Thursday: Out of town.

Friday: Out of town (rehearsal dinner...).

Saturday: Out of town (wedding reception...).

For breakfast, we each grab what we want: waffles, muffins, cinnamon rolls, pancakes, cold cereal, yogurt, etc.

For lunch, I usually eat leftovers or something simple, like grilled cheese or quesadillas. My husband eats a sandwich or leftovers - he takes his lunch to work.

  1. That Chicken Enchilada dip sounds wonderful. Have fun at the wedding!

      Cleaning out the freezer sounds great. We're working on cleaning out the fridge so there's nothing lurking in there when we leave!
