Menu Plan 4/8: Carnitas, Cheeseburger Meatloaf, Taquitos...


Sunday: Easter dinner - Grilled steak, roasted potatoes, salad and rolls.

Monday: Out to eat after the funeral visitation (yes, we have a funeral during the week after Easter!).

Tuesday: Carnitas, salad.

Wednesday: Cheeseburger Meatloaf, roasted potatoes with carrots.

Thursday: Secret Pal potluck at church (I have no idea what I am taking yet!).

Friday: Baked Creamy Chicken Taquitos, vegetables.

Saturday: Grill.

For breakfast, we each grab what we want: waffles, muffins, cinnamon rolls, pancakes, cold cereal, yogurt, etc.

For lunch, I usually eat leftovers or something simple, like grilled cheese or quesadillas. My husband eats a sandwich or leftovers - he takes his lunch to work.

  1. I love the roasted potatoes - sounds delish! Do you use a recipe for Canitas? I've never been able to find a recipe that has the flavor I want. I guess that's why I end up making my own recipes. :)

    1. I kind of use a recipe for the Carnitas...it's from a cookbook (someone gave me) called Incredibly Easy Gluten Free. I don't really follow the recipe, though! LOL

      I put the pork in my small crockpot. Then, I put in some chili powder,oregano and cumin. I also add 1/4 cup liquid (either chicken broth or I just used water this time). After the pork is cooked through, I shred it with two forks and return it to the crockpot, adding some salsa then, too. We really like it!
