Menu Plan 2/5: Pizza Sloppy Joe, Chicken Enchilada Dip, Stuffed Pepper Casserole...


How did you do with your menu plan last week? We did fairly well with our plan. I didn't make the Homemade Spanish Rice, so I'll save that for later this month if I need an idea (because we all know that I can't dream up dinner without a plan!).

I had a slight problem with the Baked Chicken Taquitos - I could not open the jar of salsa! I tried every trick in the book, to no avail. I ended up having to leave the salsa out of the mixture - and really, they were fine. {For the record, even my husband had trouble opening the jar, although he eventually did get it open!}

Sunday: Monterey Chicken, fried potatoes, and steamed broccoli.

Monday: Pizza Sloppy Joes (using homemade pizza sauce), salad, and Chebe cheese rolls.

Tuesday: BBQ Chicken sandwiches (crockpot), rice, and veggies. (We need to eat dinner at church on Tuesday night.)

Wednesday: Leftovers.

Thursday: Chicken Enchilada Dip, rice, and veggies.

Friday: Stuffed Pepper Casserole, dinner rolls.

Saturday: Pizza Chicken, roasted potatoes, and veggies.

For breakfast, we each grab what we want: waffles, muffins, cinnamon rolls, pancakes, cold cereal, yogurt, etc.

For lunch, I usually eat leftovers or something simple, like grilled cheese or quesadillas. My husband eats a sandwich or leftovers - he takes his lunch to work.

  1. I too need back ups for my menu in case something goes astray. I can't handle not having a plan...
